Abstract

Objective: The present study aimed to conduct a literature review on allergy-related markers, focusing mainly on biological samples. Method: A literature review was carried out, where the bases consulted were PubMed, Elsevier, SciELO and ScienceDirect.

Results: Allergens can cause hypersensitivity in susceptible people and develop allergic reactions. The identification and monitoring of these allergens has increasingly become a reference in the food industries. Investments in the identification of effective labeling and the analytical methods work effectively in the analysis of proteins in biological samples. The Liquid Chromatography system coupled to Mass Spectrometry (LC / MS) proved to be satisfactory qualitatively and quantitatively even in a small amount of sample. Identifying allergens could save lives.
