Introduction: In recent years, food has been a matter of concern worldwide due to the great increase in its production demand, causing the agencies responsible for health to warn of the need to try to prevent contamination of food by bacteria and fungi. Objective: The present work sought to evaluate food security in the last collections of ANVISA (National Health Surveillance Agency) of the food market, involving aspects of safety, contamination and health compromise based on the legislation that provides for the collection of food and its communication to ANVISA and consumers. Methodology: In the first moment, a systematic review of the Recall data was raised, and the search period was based on the last six years. Results: From 2014 to 2019, ANVISA determined the suspension, distribution and commercialization of various products contaminated by bacteria and fungi. Conclusion: The realization of the recall, guarantees not only the fulfillment of a legal duty, but above all, the protection of life, health and safety of consumers, considering the consequences that a food contaminated by microorganisms would cause.
